Glorious Morning Muffins
Tasty, nutritious, versatile, and fun to make - great for a grab and go snack!
Ingredient List:
Combine the following dry ingredients in a large mixing bowl:

1 and 1/3 cups gluten-free flour*
1/4 cup granulated sugar
1/4 cup brown sugar
1 and 1/4 teaspoons xanthan gum
1 and 1/2 teaspoons baking soda
3/4 teaspoon cinnamon
1/4 teaspoon salt

*4 cups brown rice flour
1 and 1/2 cups potato starch
1/2 cup tapioca starch
Step 1:
Add to large bowl:

1/4 cup vegetable oil
1/4 cup applesauce
2 eggs
1 and 1/2 teaspoons lemon juice
Step 2:
Fold in 1 and 1/2 cups total your choice:

chopped apple
grated carrots
grated zucchini
pineapple chunks, drained
Step 3:
Then fold in 1 and 1/2 cups total your choice:

raisins
pecans
walnuts
sunflower seeds
toasted coconut
chopped dates
Preheat oven to 350 degrees. Bake muffins for about 20-25 minutes.

Yield: 12 glorious muffins.
